Happy 4th of July!
Fourth of July equals family, friends, fun in the sun, and of course-FOOD. I'm planning a Sunday bbq and stumbled upon an adorable recipe for "Kupcake Kabobs." I'm going to make them this weekend but with my own organic low-fat spin. See below for my altered recipe and healthy substitutes.
1/2 cup Organic unsalted butter, room temperature
3/4 cup Agave
2 Organic eggs
1 Organic egg yolk
1/4 tsp. almond extract
1/3 cup Organic sour cream
2/3 cup Organic whole milk
1 cup plus 2 Tbsp. cake flour
1 tsp. baking powder
1/4 tsp. salt
Pamela's all-natural wheat-free, gluten-free, and non-dairy vanilla frosting mix is a great alternative to traditional frosting.
Especially since I've become a mother, I always buy all natural food colour like Seelect.
The marshmallows look pretty awesome but I think I'd replace them with more fresh organic fruit! Best of all, so many fruits go along with the red, white, and blue color scheme (phew!)
